- "Gensô Maden : Saiyuki" is a great anime (Cool characters, nice story, good animation).
- "Fruits Basket", same as Saiyuki, but in the shojo category (Sohma-kun !!! ^o^/)
- "Hunter X Hunter" & "Shaman King" are nice, but I prefer a lot their manga version.

I'm not sure yet what countries everyone is in, so this might not apply, but if you're in the United States and are wondering about whether or not you want to watch Inu-Yasha, you should just turn on Cartoon Network some night at 12:30AM, Monday through Thursday. Unlike Trigun, the show is virtually unedited, and the dub, although not good, is passable.
I watched a couple episodes of it last week and became sort of entranced by it. There didn't seem to be anything really extraordinary about it, but the overall execution of it made it a really interesting show. It's adventure oriented, not really a comedy OR a drama... sort of like the first few episodes of Dragon Ball Z, but with a faster pace. It's also got a rich and lively world that's just as interesting and fleshed-out as a gothic vampires/werewolves/demons Castlevania setting, but without the same boring rehashes of quality storytelling that we've all seen in vampire settings a hundred times over. The story is based off of a lot of Japanese myths and legends, but it isn't the same ones that I've seen over and over in anime and Japanese video games, like the four guardian animals, the Chinese zodiac, etc.
I haven't watched enough of it to give you a serious review of it, but it looks interesting.

Saiyuki - I'm editing a review of Saiyuki and from what I have learned from it, the anime felt so compacted. The manga is way better.
Trouble Chocolate - *
Fruits Basket - Saw first episode. From what I have seen, it's funny and touching, but there are too many characters to keep track of. Oh and even though people will say that it's Funi's best dub as of now and that I haven't heard it, the dub still isn't even that great.
Sugar - Are you talking about Tiny Snow Fairy Sugar? (Japanese name has escaped from my head right now, since I just woke up.) If so, I did see a fan sub of the first episode a while before it got licensed. It's not as funny as Digi Charat or Pita Ten, but I like the environment of the series.

Hunter X Hunter - *
I Me My Strawberry Eggs - So-so series. Starts off good, but starts becoming less interesting towards the end.
Shaman King - *. I was supposed to watch this though, especially since Megumi is in it. Too bad that when it hits N. American television, it will be totally edited and it will be just another collectors anime (a la, the edited Yuugioh).
Inu Yasha - It's definitely another Ranma in terms of length. Yeah, it's missing parts from the manga, but that's not surprising. At least it has spiffy Avex music.
Wild Arms - *.
Other series?
- Ai Yori Aoshi (Think Love Hina, but make the guy smart, jack up the fan service by a notch and you got it. Could've been one of the greatest series ever if it wasn't for the amount of fan service.)
- Chobits (Tokyo has gotten into the Persicon fad, in which guys purchase a robotic female. Uh, I remember seeing the first fan subbed episode long before it got licensed, but if you can get past the pacing and plot problems at times, you'll like it.)
- Angelic Layer (Haven't seen this yet. I heard that Enomoto Atsuko [Yukino in Karekano] was just flat in this series, but at least it feels fun to watch. Uh, it's about a game called Angelic Layer in which people customize a doll and place it in a battle layer.)
- Witch Hunter Robin (Oh, I want to see this. It's about a witch exterminator who happens to be a witch herself. I don't remember much bad stuff about it though.)
- Onegai Teacher (Female alien becomes a teacher. Kikuko is fine here, but main character really could use a personality change.)
- Happy Lesson (Yes, this visual novel-turned anime is coming to America. A guy is raised by his teachers who all happen to be female. It's real hilarious, but it doesn't have much of a story.)
- Noir (Seen about half of the series already. Two asassins find out about an old age mystery. Good action, has nice visuals and it feels like a noir, but it's a questionable series to keep in the long run because of its pacing. Plus, you don't get the noir feeling because of the lack of a French track.)
- Read or Die (Two asassins bring out action in a highly historical series. Too much good stuff, but waaay too short.)
- Hand Maid May (Cheerful anime, but waaay too predictable. Has a Tenchi-feel, but the girls are androids.)
- SDK (Yeah, people told you what it is already. I heard that in some cases, it's a bit too much like Kenshin though.)
There are some others out there that don't fit your bill and some that aren't at the top of my head, but I hope I gave you enough suggestions.
Edit: I completely forgot. Pita Ten is not in America yet.

Really? I started watching this one just a week ago but it didn't seem all that good. I feel I've seem better romantic comedies involving aliens and better classroom comedies too. That was based on first impressions though; should I maybe stick with it a little longer?

Watched some of it, and no argument about the Kenshin similarities, but it does have its quirks here and there. I like the guy in the bandanna (name escapes me)

Inuyasha is one of my personal favorites right now. I really enjoy the current Shichinin-tai story arc and it's going to end sometime soon. Bankotsu the leader of that group is a major bad ass and has the coolest spear ever. In the manga, they just ended the Abi-Hime (a bird demon princess who was forced to work for Naraku) storyline and are about to find the final Shikon no Tama shard in Inuyasha's father's grave. Naraku right now in the manga has a wicked outfit and is more powerful then ever. Inuyasha is on it's way to it's conclusion (or is it?)
Shaman King I heard got licensed by FUNimation (as you know, the same people who raped Dragon Ball Z and Yugioh) so I'm not touching their version with a 100ft pole. But a lot of my friends tell me the manga is better and I have yet to see the anime version.
I, My, Me! Strawberry Eggs is a pretty descent anime, nothing really ground breaking. If you wanna watch it go ahead. It's not really the greatest. Some what of your typical casual anime I say. Only 14 episodes so just watch it if you wanna. I thought it was funny but I prefer GTO and Onegai Teacher.
Another anime I really reccomend is Sexy Commando Gaiden Sugoi Yo! Masaru-San! The episodes are 8 minutes long but it's worth it. It' the most hilarious anime ever. It's about a high school student who is a martial arts master and is unsatisfied after he learns an art. Then he stumbles upon a magazine that suits what he needed, THE SEXY COMMANDO. He takes some time off of school to master the sexy commando fighting style and comes back weirder then ever.
Other anime I think that are great to watch are Naruto, X (the TV series), Chobits, Jojo's Bizarre Adventure, and Gundam SEED
