Well I just got it today, I only had time to play it for about 45 minutes, but enough to post and give you guys a good idea on what it's like
Sprites: They're a LOT smoother than the PS2 port of CvS2. I have yet to unlock characters like Morrigan but it's very decent from the characters and sprites I've seen so far.
3D Backgrounds/3D graphics: VERY nicely rendered compared to the DC version. Very sharp and almost distracting. But then when I play the DC version at my friend's house I play it on his 20" Mono TV, and the PS2 version on my own 27" Stereo TV. So that could be why it looks so good.
Sound: The WORST feature here. A lot of the sound effects are strangely garbled, it's just...weird. If you've never played the game before, it's ok, but if you've played the DC version. Well..it's like Square's PSX ports of FFIV-VI and CT. Some of the sound effects just sound "different". The music is nice, clear, and sharp. The voice samples, while a little low, are nice and clear also. However the announcer is very soft, you can barely hear "FINISH" and the intermission/win dialog is very quiet as well.
Control: I find it very hard to change the controls, and even then the Assist Buttons seem a little Non Responsive (sometimes I have to press the button twice) Other than that, very solid.
Misc:
-The frame rate is extremely smooth, you won't notice much difference compared to the DC version in terms of Triple Supers and animation.
-The Art Gallery is pretty cool. It's (so far) wallpaper size pictures that show the characters intermission portrait standing over a much larger Super Portrait sketched in black and white.
-The Marvel logo in the MvC2 logo has been changed to a red block with the "Marvel" in White. It's hard to explain the difference between this and the old version, but you'll notice it.
-It's CD format, I got a Disc Error the first time running it. Damn PS2.
-Oh the COmmand Display list is interesting. Unlike CvS2's, you turn it on while paused and it'll be displayed at the top of the screen and you use the right analog stick to scroll though it. I prefer the one in CvS2, I like to PAUSE the game and look at the list, the one in MvC2 was made for Training Mode.
That's pretty much it.

Is the art gallery just intermission portraits or did they put in some original stuff?

Okay, here's how it works, you go to Secret Factor. In the DC version there were 3 "slots" where you buy the characters, stages, and colors. Now, you can scroll over to the right where there's a third slot to buy artwork for a character. Then on the Secret Factor menu you go to Gallery where it shows the character select screen. The characters that are lit up have their artwork available (that you bought). You select the character and voila! You can even zoom in and look at the picture in fine detail. It looks really cool like something out of a manga sketchbook. I wish there was a way I could extract the images, because they'd make great wallpaper.

Oh, what type of cable are you running from the ps2 to TV. composite, s-video, component etc?
Yeah I know, there's a "pause" in between loading menus. My guess, since CvS2 ran so much smoother (on DVD rom) it's something regarding it being CD. Oh and I'm running it on A/V cables.

That's what I like about the gallery is that it ISN'T just the intermission portraits. Each character has a "wallpaper-like" image with a pencil sketch of their super portrait in the background and their fullbodied Intermission portrait standing on the right stand. It's pretty cool. I have yet to see if there's any more types of artwork (promo artwork, ads, etc). What's nice is the artwork only costs from about 100-400 max.
