The GGXX one is called Burst Encyclopedia.

I don't know the other one though.

Guilty Gear X: slash encyclopedia
Guilty Gear X: Drafting Artworks
Guilty Gear XX: Burst encyclopedia

and there is an officeal japanese players/game guide called just the Guilty Gear X guide.

and a whole bunch of GGX comics/henti books
